When thousands of Italian immigrants landed in Argentina, they found an abundance of foods such as cheese and tomatoes. At that moment, pizza undergoes a transformation, going from being a secondary dish that accompanies other meals to being a main one, full of abundant ingredients. In 1893, a Genoese immigrant, Agustín Banchero; opened a bakery where he sold pizzas. In 1932, almost forty years later, he opened one of the 1st pizzerias in Argentina in La Boca neighborhood. At this time the consumption of pizza and fainá was consolidated, as well as the custom of eating them in portions and standing up. Also at this time it undergoes an essential modification in the recipe and the yeast replaces the use of the traditional sourdough.
